I wanted to make a pizza yesterday and didn’t feel like making just a regular old pizza so I looked around in the fridge to see what was on hand, and down in the vegetable I saw two lonely limes. I’ve never tried lime on pizza before, or even heard of it but I was going it give it a shot.
I started by spreading a VERY thin layer of sauce on the crust, and dashed crushed red peppers on that. I love lime in fresh salsa so I figured chunky tomatoes were a must, so I cut up two tomatoes in BIG slices, I then sprinkled sea salt on top of the tomatoes becouse fresh tomatoes are so good when you salt them. I then added salami and covered the pizza in some fresh grated Parmesan and then squeezed the two limes over top.
When I pulled this out of the oven and had a slice I amazed at how bold the flavor was, it was like a broadside of taste, yet still managed an elegant simplicity.
