For the last few days I've been making myself a breakfast that my mom calls Belgian Pancakes, looking around on Google, these may just be Crepes but that is not the point.
After I've put a pot of water on for my coffee I put a cast iron skillet on the stove, while that is heating up I crack two eggs into a bowl and add some half and half or cream (whatever is on hand, milk should work, but I don't drink milk). After beating these with a whisk I sift in a heaping spoon full of flower and whisk that in, I then add another and repeat.
By this time the skillet should be nice a hot, so I'll throw in a large pad of butter and poor in the batter. At this point I will put some real maple syrup into the microwave. After a minute or two on the stove I'll put the skillet into the oven (on a lower rack) and turn on the broiler. It's best to put an oven safe plate on the rack below the skillet (under the skillet so it doesn't get too hot) After a little while the pancake will puff up, pull it out when the broiler just starts to brown the tops.
After taking it and the plate out I'll sprinkle some powdered sugar on top and put on the syrup. It is amazing.

grate some nutmeg and cinnamon into it.
